Food Catering Stations
A food station can be as simple as a stationary hors d' oeuvre table with a display of fresh fruit, assorted cheeses and crudités with a collection of finger hors d' oeuvres served before a sit-down dinner or a cocktail reception can be a collection of food stations so guests can mingle and graze over each food station. One note about food stations is if a station needs attending it increases staffing costs.
Carving Station
Custom preparation: We can suggest special preparation to below cuts of meat to be wrapped, crusted, glazed, stuffed or rolled then served with appropriate sauce
- Beef (Premium U.S.D.A. Choice Black Angus beef) and Veal
- Steamship round, top round, top sirloin, London broil from flank steak, strip loin, boneless prime rib and chateaubriand
- Poultry
- Glazed turkey breast, smoked turkey breast, mushroom duxelle stuffed turkey breast, turducken (looks like a whole roasted turkey but is boneless whole turkey on the outside encased around boneless whole duck in the middle with boneless whole chicken in center with corn bread dressing between each bird)
- Lamb
- Leg of lamb – on bone, boneless or stuffed leg of lamb and rack of lamb
- Pork
- Glazed spiral ham or pork loin
- Fish
- Roasted whole pepper crusted tuna loin
Pasta Station
- Choice of assorted pastas shapes, stuffed shells, tortellini, gnocchi and sauces (to be determined by client's preferences)
- Alfredo * Bolognese * Marinara * Rose * Pesto
Note: (This station can be self contained for self service where pasta dishes are prepared in kitchen or chef prepared right at food station but will increase staffing cost)
Finger Licking Station
- Barbecue baby back or St Louis ribs and buffalo wings with celery sticks and blue cheese dressing
Vodka and Caviar Bar
- Chilled premium vodkas (supplied by client) served with assorted caviars, toast points, minced onions, crème fraiche and chopped egg whites and yolks. Upscale it with an elegant vodka ice carving luge by "Hot Ice" http://www.hoticeinc.com/
Seafood Station
- Hot “ Maryland Style” Crab Dip
- Blend of lump and backfin crabmeat, cheddar and herb cream cheeses, white wine, minced shallots and seasonings served hot, accompanied with sliced baguettes
- Poached Salmon
- A beautifully displayed whole Atlantic Salmon served with a cucumber dill sauce, chopped eggs, capers & minced onions
- Raw Bar
- Oysters and clams on the half shell
- Jumbo cracked blue crab claws
- Steamed shrimp
- Accompanied with saltines, cocktail sauce, lemons, minced onions and horseradish
- Garnishing
(for presentation purposes only. Not enough to serve guests but can be added to raw bar for additional cost as can cracked stone and Jonah crabs claws, and king crab legs)

- Field greens, caramelized walnuts, plump raisins, crumbled blue cheese, cherry tomatoes, onions, and cucumbers tossed in a citrus vinaigrette
- Mixed Salads

- Marinated mushrooms, tomatoes and cucumber
- Cannelloni, marinated roasted red bell pepper, corn, and cilantro salad
- Oriental tortellini salad
Mash Potato Bar
- Roasted Garlic Mash and Sweet Potato Mash with choice of toppings:
- Chives, bacon bits, shredded cheddar, sour cream, salsa, chopped olives, whipped butter, marshmallow crème and chopped pecans
Note: If a client has any special requests we can add it and the mash potatoes is most impressive when guests use martini or margarita glasses
Soup Station
- Assorted homemade soups to be determined accompanied with bread bowls, oyster crackers, seasoned croutons, crispy noodles, chopped scallions and grated Parmesan cheese
Mexican Fiesta Station
- Create your own Fajitas and Tacos with:
- Sliced marinated chicken breast and beef steak, seasoned chopped beef, flour tortillas, taco shells, grated cheddar and Jack cheeses, tomatoes, jalapeño peppers, raw and sautéed onions and green bell peppers, sour cream, and salsa
- Chile Con Queso Fondue Fountain
- Warm creamy nacho cheddar cheese sauce flowing down the fountain for easy slathering fondue on tortilla chips
- Tex-Mex Dip
- Layers of refried beans, nacho cheese, salsa, cumin sour cream topped with cheddar and Monterey Jack cheese, diced tomatoes, scallions, bell peppers and black olives. Served with tortilla chips.

- Cherry tomatoes stuffed with fresh mozzarella and pesto, asparagus wrapped in prosciutto, provolone and fresh mozzarella cheeses, Genoa salami, pepperoni, prosciutto, roasted red bell peppers, grilled eggplant roulades, marinated mushrooms, artichoke hearts, hot cherry peppers and assorted olives
- Bruschetta
- Garlic rub grilled crusty bread slices topped with diced tomato, parmesan, fresh oregano, garlic and extra virgin olive oil
